Spaghetti Sauce — One Litre

Meat sauce, the long way. No jar has ever tasted like this.

What you need

  • 2 lb (900 g)ground beef
  • 2 largeonions, diced fine
  • 3 stalkscelery, diced fine
  • 2carrots, diced fine
  • 4 clovesgarlic, minced
  • 2 × 796 mlcrushed tomatoes
  • 2 tbsp (30 ml)dried Italian herbs
  • 2 tsp (10 ml)salt, and more at the end

How it goes

  1. Brown the beef hard in a heavy pot, in two batches. Take it out and leave the fat behind.

  2. Cook the onion, celery and carrot in that fat over medium-low for a full 15 minutes, until they collapse and start to sweeten. Everyone rushes this and everyone can taste that they did.

  3. Garlic and herbs for the last minute, then the beef back in, then the tomatoes.

  4. Bare simmer, lid askew, 3 hours. The carrot is what makes it a little sweet — no sugar goes in this.

  5. Salt properly at the end, once it has reduced.

A couple of things

  • This is the sauce the lasagna is built on. Make the batch, sell three litres, keep one.
  • Cool it in a shallow pan before the fridge, not in the deep pot.
